The local zoo is free this month for city residents, so my very sweet husband took all of the younger children this morning! Our zoo is huge, so I didn't think I wanted to crutch around quite
that much. Instead I have some other plans today...

Abbie and I are going to make these egg rolls. I am planning to make enough to flash freeze some of them for later. Cooking while on crutches is a challenge, so I don't think it'll happen today, but at some point I want to experiment with making some
gluten free egg roll wraps... I'll let you know how they turn out when I do. For today's project, we are using premade egg roll wraps purchased in the refrigerated section at Wal Mart. Should be fun! (and hopefully yummy too!)
